Under the 2026 Famous Dave’s Franchise Disclosure Document, a franchisee operates one approved Famous Dave’s® Restaurant under one of six contract service types. The unit sells approved barbecue food and beverages through dine-in, takeout, catering and approved delivery; the franchisee employs the team while Famous Dave’s controls the Restaurant System.

Offering and demand

What does a Famous Dave’s unit sell, and who buys it?

The Restaurant sells the Foods, Beverages and Products specified or approved by Famous Dave’s, principally hickory-smoked barbecue meals, sides, desserts and beverages. Demand comes from individual restaurant guests, digital-order customers and group-event buyers using dine-in, takeout, delivery and catering channels.

The Franchise Agreement requires all specified Foods, Beverages and Products and prohibits unapproved items. The public Famous Dave’s menu includes ribs, feasts, barbecue combinations, burgers, sandwiches, salads and desserts.

Group transaction

Catering and event fulfillment

The official catering program serves business and personal events through pickup, delivery-and-setup or full service. It adds quoting, guest counts, scheduled production, transport, setup and sometimes staffed buffet service.

Customers using the approved digital path select a location, menu, method and time. The online-ordering help page lists pickup, delivery and curbside at checkout and requires online payment; Famous Dave’s Rewards connects identity, offers and ordering.

Format logic

Which formats materially change how the Restaurant operates?

The contract identifies six Restaurant Types. The largest divide is dine-in capability versus Cloud Kitchen or Add-on Ghost Kitchen formats limited to delivery and to-go; the FDD does not define the separate Counter, Line and Flex service flows.

Full Service

Supports on-premises guest service. Restaurants of 4,000 square feet or more generally must serve beer, wine and other alcoholic beverages unless Famous Dave’s agrees otherwise, adding liquor-licensing and bar-control dependencies.

Counter, Line and Flex Service

These are separate contract selections, but the FDD does not define each service flow. The public site markets a Quick ’Que model with counter ordering and no table service; its legal mapping should be confirmed.

Add-on Ghost Kitchen

Operates inside a non-Famous Dave’s restaurant or at a site previously associated with the brand. It may sell only delivery and to-go orders and requires the applicable addendum.

Cloud Kitchen

Operates from a commercial kitchen without dine-in service. Delivery geography depends on designated partners; self-delivery requires prior written consent and the contract requires an addendum.

The public site treats drive-thru as a Quick ’Que add-on, not a separate Restaurant Type.

A verified operating cycle moves from approved demand generation to order capture, food preparation, channel-specific fulfillment, payment and loyalty processing, then POS/RMS reporting. The exact service path changes by Restaurant Type, but the approved systems, menu boundaries and reporting obligations remain central.

Owner and labor model

Can the Restaurant be manager-run or absentee-owned?

The model is not absentee. The Operating Partner must hold at least 20%, participate full time and complete training. A Multi-Unit Manager exception applies only to the six-or-more Restaurant development circumstance in the Franchise Agreement.

Owner participation

If the franchisee is an entity, the Operating Partner must have at least five years of restaurant management experience. The franchisee controls hiring, firing, pay, scheduling, discipline and supervision; Famous Dave’s disclaims day-to-day employee control.

Management Staff includes the Operating Partner, General Manager, applicable Multi-Unit Manager and other managers. Sufficient management, service and kitchen personnel must be on duty. The franchise FAQ describes 30 to 60 employees depending on volume and model and names front-of-house, to-go, catering, utility, prep and line-cook roles; this is not a contractual minimum.

Inputs and systems

Which suppliers and technology are mandatory?

The franchisee cannot source freely. Proprietary inputs move through approved or designated suppliers, while the Restaurant must maintain approved POS, RMS, security, payment, tablet and digital-ordering systems.

Food and disposables
Proprietary proteins, sauces, seasonings, recipe ingredients and selected disposables must be purchased through the Famous Dave’s Distribution Marketing Advantage system, Sysco Corporation or another designated distributor.
Transaction layer
The approved POS records sales and integrates required technology; an approved processor handles debit, credit, Rewards and Gift/Loyalty Card transactions.
Management layer
The RMS processes sales, inventory, labor and cost of goods. At least two tablets support management, training, communications, hiring and Olo order management.
Security and connectivity
A designated security appliance, network components, internet connectivity and PCI DSS controls support secure access. For2Fi is an optional backup connection.
Digital fulfillment
Olo is the named approved online-ordering vendor. Other store-specific apps require written approval, and third-party delivery may require a directed POS integration.
Technology requirement

Famous Dave’s may require replacement systems for security, ordering, loyalty, kitchen display or reporting. It reserves independent access to Restaurant data and may retrieve sales information from unit computers.

Famous Dave’s controls the Restaurant System; the franchisee controls employment and daily operations. Local judgment remains in staffing, scheduling, pricing and approved-market execution.

Marketing, location and channel limits

How protected is the franchisee’s market?

The grant is non-exclusive and normally tied to one Franchised Location. Any applicable territory is subject to captive-market, affiliate-brand, retail-product, special-event and distribution carve-outs.

Territory limit

Famous Dave’s will not develop a Restaurant with a territory intersecting an applicable franchisee territory, but no other exclusivity is intended. Captive markets, affiliate concepts, branded retail products and internet sales remain carve-outs.

The franchisee may accept outside orders but cannot create unauthorized wholesale, off-site or internet distribution. Delivery requires approval; kitchen-format reach depends on designated partners. Relocation also requires approval.

Marketing combines the franchisor-controlled Fund, local advertising and any Local Advertising Association. Local materials require approval, and the franchisee may not create an independent Restaurant website or unapproved social presence. Brand-controlled location pages and Famous Dave’s Rewards are core demand dependencies.

What does Item 20 show about the operating base?

At November 30, 2025, the U.S. system contained 70 franchised Restaurants and 30 company-owned Restaurants. The 70/30 composition gives Famous Dave’s a material company-operated base while leaving most outlets in franchisee hands.

Interpretation: the system was predominantly franchised, with company operations at 30%. Total outlets declined from 124 at the start of 2023 to 100 at the end of 2025; Item 20 projected five franchised openings by November 30, 2026, not actual 2026 openings.

The FDD defines the control framework but leaves gaps in format mapping, the current technology and supplier schedules, and location-specific staffing and channel rules.
