Lee's Famous Recipe Chicken uses a traditional quick-service restaurant model: the franchisee staffs and runs a stand-alone unit, prepares an approved chicken-and-biscuits menu, accepts orders through approved channels, and records each transaction through franchisor-specified technology and purchasing controls.
The franchisee controls the local workforce and daily execution. Lee's Franchisor LLC controls the menu, recipes, suppliers, equipment specifications, brand standards, approved hours, marketing materials, digital channels, data access, inspections, and reporting. Lee's Distribution LLC and approved third parties supply critical food, packaging, equipment, payment, and technology inputs.

What does a Lee's Famous Recipe Restaurant sell, and who buys it?
The Restaurant sells all and only approved chicken, biscuits, beverages, sides, desserts and related menu items to the general public. Alcohol is prohibited, and the franchisor may add mandatory Products or remove approved offerings.
The 2026 FDD defines the traditional Restaurant as a large stand-alone new or renovated building with interior seating, a drive-through and on-site parking. New and reimaged structures are development paths, not separate ongoing formats. Item 19 identifies legacy and affiliate-operated non-traditional locations, but Item 1 offers the traditional Restaurant.
Demand reaches the Restaurant through the counter, drive-through and approved digital ordering. The official ordering interface shows pickup, delivery and curbside availability varying by location. Lee's Famous Rewards connects eligible in-store, website and app transactions, with participation varying by store.
Catering requires prior written approval and system standards. The official catering page describes pickup, delivery, buffet, boxed-lunch and full-service options that vary by location. Delivery also requires approval plus designated software, packaging, billing and reporting procedures.
How does an order move through the unit?
An approved channel creates the order; Focus POS records it; trained restaurant employees prepare and assemble approved Products; the unit hands off the order through the selected channel; management then reconciles inventory, labor, food cost, sales and required reports.

The FDD does not authorize absentee operation. A sole proprietor participates directly. An entity appoints an approved Operating Principal with at least 5% ownership or 5% profit participation, full-time day-to-day control and a residence within reasonable driving distance. The Operating Principal or an approved certified manager must remain on-site at all times.
Who performs each operating function?
The franchisee employs the unit team and makes every employment decision. Lee's Franchisor LLC sets role-related operating standards and training requirements but disclaims control over hiring, firing, compensation, benefits, scheduling and discipline.
The FDD discloses approximately 20-45 employees for a traditional Restaurant but no shift headcount, labor ratio or staffing schedule. The franchisee sets staffing subject to continuous approved management coverage and brand, food-safety and service standards.
Which suppliers, equipment and technology are mandatory?
The operating system depends on sole-source proprietary food inputs, approved suppliers, specified kitchen equipment and a franchisor-controlled technology stack. A franchisee may propose alternatives, but cannot use them until written approval is granted.

What inputs are most tightly controlled?
Proprietary food supply
Lee's Distribution LLC is the sole approved source for specified macaroni-and-cheese, baked-bean, green-bean, gravy, biscuit-dough, chicken-seasoning, marinade, breading, dip, sauce and dressing inputs.
Kitchen and service equipment
Approved specifications cover convection ovens, dispensers, Henny Penny pressure fryers and warmers, AyrKing breading tables, steamers, beverage systems, digital menu boards and Focus POS.
Computer System
Focus POS is the only approved POS System disclosed. It records orders and tracks inventory, food cost, labor and financial data. Lee's Franchisor LLC can require replacement, upgrades, polling and designated back-office software. See the Focus POS platform.
Payment and data controls
The Restaurant must follow PCI/DSS, document compliance on request and use approved payment devices. Lee's Franchisor LLC may require a compliance vendor; the PCI Security Standards Council publishes the payment-data standard.
The Franchise Agreement places no limit on Lee's Franchisor LLC's right to poll the POS System. Lee's Franchisor LLC owns Customer Data stored on the Computer System during the term; the franchisee obtains consents, follows privacy rules and uses the data only for the Restaurant.
What does the franchisor control, and what remains a franchisee decision?
Lee's Franchisor LLC controls the customer promise and monitoring data. The franchisee controls the employer function and remains responsible for legal compliance, staffing, property condition and daily execution.
Does the territory protect customers or digital sales?
No. The Designated Territory is non-exclusive and typically extends zero to one mile around the Restaurant. It limits certain traditional Restaurant development but does not grant customer, internet, delivery or alternative-channel exclusivity.
Lee's Franchisor LLC may place Restaurants at Non-Traditional Venues inside the Designated Territory and use the Marks through grocery, retail, wholesale, internet, kiosk, cart, mobile and other channels. The franchisee cannot use internet or alternative channels without approval and should focus local solicitation around the Restaurant.
An Area Development Agreement creates a Development Area tied to an opening schedule. Reserved rights still apply, and schedule default can reduce or terminate protection. The official franchise support page summarizes site, vendor, training and operations support; executed agreements control territorial rights.
What does Item 20 show about the operating network?
The U.S. system ended 2025 with 127 outlets. Item 20 combines franchised and legacy licensed outlets in one category, so its ownership trend must not be read as a count of current-form franchises alone.
Counts use Item 20's source-defined categories: “Franchised and Licensed” and “Company-Owned.”
From 2023 year-end to 2025 year-end, the combined franchised-and-licensed category fell from 106 to 92, while company-owned outlets rose from 17 to 35 and total U.S. outlets increased from 123 to 127.
Source: 2026 Lee's Famous Recipe Chicken FDD, Item 20, Table No. 1, p. 62. Item 19 separately reports the 2025 U.S. total as 25 franchised, 67 licensed and 35 affiliate-owned locations.
Which operating details still require confirmation?
The FDD defines the control structure but not every current vendor, integration or location-specific channel. Verify the proposed Restaurant's operating package before treating a public brand feature as an available right.
Lee's Famous Recipe Chicken generates transactions by selling approved prepared-food Products to the general public through a traditional Restaurant and approved off-premises channels. The franchisee's central responsibility is disciplined local execution: staffing, supervision, preparation, service, sanitation, inventory and reporting.
The strongest dependency is the franchisor-controlled product, supplier and technology architecture, particularly Lee's Distribution LLC proprietary inputs, Focus POS, Customer Data access and the Operations Manual. The critical distinction is that the Designated Territory does not protect digital channels or Non-Traditional Venues. The largest remaining question is the exact current vendor-and-channel package required for the proposed Restaurant.
