A Non-Street-Front Bakery relies heavily on foot traffic in malls, Walmart stores, airports, entertainment venues, travel plazas, convenience stores and similar destinations. Owner participation

This is not contractually described as an absentee model. The franchisee must personally supervise or employ a Designated Manager. The responsible manager must devote at least 40 hours per week to on-premises management, and a trained, certified person must be present whenever the Franchised Business is open.

Who performs the work and who controls employment?

The franchisee hires, schedules, pays and directs the unit workforce. Wetzel’s Pretzels, LLC sets training, certification, presence, food-safety and operating standards but does not employ the franchisee’s personnel.

The Manual’s station structure identifies Prep, Roller, Baker, Master Cashier and Sampler responsibilities, plus Bakery Manager and Assistant Bakery Manager certification. The franchisee decides headcount, shift structure and compensation because the FDD does not prescribe staffing ratios. It does prescribe supervision: each Bakery requires its own Designated Manager, and a replacement must be appointed within 30 days after a manager leaves.

Operating hours are also controlled at the system level. Bakeries generally operate at least 56 hours per week or the landlord’s required hours. A Concession Truck or Trailer generally operates at least 16 hours per week, four hours on four days, for at least 40 weeks per year; seasonal closures require notice and approval.

Which suppliers and technology systems are mandatory?

The franchisee chooses among approved options only where the FDD permits choice. Proprietary dough, branded inputs, POS hardware, payment processing, online ordering and reporting remain materially controlled by Wetzel’s Pretzels, LLC.

Proprietary food inputs

One designated supplier is the exclusive source for proprietary pretzel dough mix. Proprietary food items may be limited to a designated supplier, while other toppings and condiments may be purchased from approved suppliers that meet specifications.

Branded operating inputs

At issuance, Wetzel’s Pretzels, LLC was the sole approved supplier of branded hats, shirts, uniforms, cups, paper goods and other marked items. Approval can be withdrawn when a supplier or product no longer meets standards.

Wetzel’s Pretzels, LLC and its affiliates retain grocery, club-store, wholesale, computer and mail-order rights, plus the ability to sell Proprietary Products through other channels. Delivery areas may differ from the Protected Area and can be adjusted or revoked. A Concession Truck or Trailer receives a Mobile Area but may sell only from the vehicle at approved sites inside that area.
